Winter got you down? Let’s fire up the pork and all chow down!

When the days grow short we all need a warm dish of comfort food. Try this Vietnamese country favorite — Thit Kho Trung — slices of pork tenderloin and hard boiled eggs cooked in a tasty sauce of coconut milk with palm sugar, fish sauce, garlic, lemongrass and black pepper. Top it all off with some scallions and serve over rice. Come on baby, light my fire!
